This week’s KOTA farmers market brunch featured eggs from Miller Farm Stand, sliced ham from Maude Hog & Cattle, fresh spinach from Cedar Creek Gardens, sourdough English muffins from Mama’s Batch Granola, raspberry jalapeño jam from Deb’s Down Home Delights, and local honey from The Honey Man.

Thank you also to Nachtigall’s Greenhouse for providing the fresh table flowers that brightened the set.

June 5 BHFM Recipe

 

Ingredients for One Omelet

  • 3 eggs
  • 1/3 cup sliced ham, chopped
  • 1 small handful fresh spinach
  • Salt and pepper
  • 1 sourdough bagel, toasted
  • Raspberry rhubarb jam and honey, served separately on the side

Directions

  1. Warm the chopped ham in a skillet.
  2. Add the spinach and cook just until slightly wilted.
  3. Whisk the eggs with salt and pepper.
  4. Pour the eggs into the skillet and cook until nearly set.
  5. Add the ham and spinach to one half of the omelet.
  6. Fold the omelet over the filling.
  7. Serve with a toasted sourdough bagel.
  8. Place the raspberry rhubarb jam and honey in separate small bowls on the side.
